Delicious potato patties with cheese and bacon. Awesome comfort food! Makes about 18 patties.
- 6 cups leftover mashed potatoes
- 2 cups Italian Panko breadcrumbs
- 4 tbsp chives
- 2 eggs
- 1.5 cups Colby cheddar cheese
- Salt, pepper to taste
- Mix all ingredients, mixing with your hands
- Mold into balls, then shape into medium patties, 0.5 inch thick
- Spray pan with cooking spray, lay patties on pan. Make sure patties are not touching each other (cheese will stick).
- Brown on one side, using medium heat. Flip and brown other side.
- Serve warm with sour cream and bacon bits.
