Potato patties

Delicious potato patties with cheese and bacon. Awesome comfort food! Makes about 18 patties.

  • 6 cups leftover mashed potatoes
  • 2 cups Italian Panko breadcrumbs
  • 4 tbsp chives
  • 2 eggs
  • 1.5 cups Colby cheddar cheese
  • Salt, pepper to taste
  1. Mix all ingredients, mixing with your hands
  2. Mold into balls, then shape into medium patties, 0.5 inch thick
  3. Spray pan with cooking spray, lay patties on pan. Make sure patties are not touching each other (cheese will stick).
  4. Brown on one side, using medium heat. Flip and brown other side.
  5. Serve warm with sour cream and bacon bits.
