So yummy, the perfect comfort food! I have a cold right now so this hits the spot! Afterwards I had a shot of the antioxidant drink Ningxa.
WHITE CHICKEN CHILI
Ingredients:
- 32 oz chicken broth
- 2 cans (16 or 19 oz) cannellini or great northern beans, drained and rinsed
- 1 4.5 oz chopped green chili can
- 1/8th tsp black pepper
- 1.5 tsp cumin spice
- 3 C cooked chicken, shredded
- 2 C Monterrey jack cheese, shredded
- 3/4 C sour cream
- Toppings: green onion, onion, cheese, avocado, or anything you like
- In a large sauce pan, mix in broth, beans, chicken, chiles, spices.
- Heat until boiling, turn down to medium heat.
- Stir in cream cheese until dissolved.
- Add in cheese and stir until melted. Take off heat.
- Serve and add your toppings
