Red Velvet Cheesecake Cups

These desserts are fairly simple to make and delicious for parties or to accent a dessert table! Use hard plastic cups like these. I will add my links so you can find the proper items that need to be used. PIN to save! Enjoy!

Cake:

  1. Heat oven to 350
  2. F. Line a shallow 9×13 baking sheet with parchment paper. Spray baking spray on it.
  3. Place eggs in stand mixer and beat 5 minutes with whisk attachment.
  4. Add sugar and oil. Mix. Add buttermilk, vinegar, vanilla, and red coloring.
  5. Sift together flour, cocoa powder, baking powder, and salt, then slowly add to mixer while mixing with paddle attachment. Mix until well combined. It will be foamy and thin.
  6. Pour batter into pan and bake for 12 minutes. Cool on counter. When cooled, cut into 1 inch pieces.

Whipped cream cheese cream:

  • 2 cups heaving whipping cream
  • 5 oz softened cream cheese
  • 1/3 cup sugar
  1. place cream cream into mixer and beat with paddle attachment. Whip until fluffy, pushing cream down several times with a silicone spatula.
  2. Pour heavy cream in and mix until fluffy and firm. Make sure you check the sides and bottom of mixer to get all the chunks.
  3. Pour mixture into a piping bag with a 1M tip (attached to a coupler). Tie bag with rubberband.
  4. Layer 3 pieces of cake and pipe a layer of cream, repeat for 3 layers or until reaches top. Decorate top with stars with the 1M tip. Refrigerate up to 2 days. Color will start to bleed slowly.
